Uma Temakeria is one of the first fast-casual restaurants to specialize in temaki, the coneshaped sushi hand rolls that were created in Japan and are wildly popular in Brazil.
The ownership group selected Jonathan Schloss / Architect to develop the concept design for the brand, and design Uma’s first location in Chelsea. Our design took cues from traditional Japanese materials, infused with a Brazilian flair and New York eclecticism.
Through careful selection of lighting and materials and playful application of color and pattern, we created a space that adapts easily from a fast-casual lunch spot to a late-night hangout. Our original restaurant design has served as a prototype for addtional Uma Temakeria locations, both temporary and permanent. These include a travelling pop-up booth and a permanent presence at Gotham West Market.
